Compounds in garlic
In its chemical composition Garlic contains volatile sulfur compounds and antibacterial essential oils, dietary fiber, sugars, organic sulfur compounds such as alliin and skordynina A and B. Enzymatic breakdown of alliin to allicin, which occurs when cut or crush garlic, it owes its intense and distinctive smell. Furthermore, garlic contains flavonoids, flavones and vitamins of the B group, the compounds of mucous and mineral salts, including selenium compounds, calcium, phosphorus, iron, magnesium and small amounts of uranium. The leaves of garlic contain pro-vitamin A, vitamin B1, PP and C.
